Plated zesty avocado chicken salad recipe

If your family enjoys chicken salad, then they’ll love this zesty avocado chicken salad recipe. Mashed avocados (in place of mayonnaise) mixed with chicken and spices create a quick weeknight dinner or no-heat lunch idea for school. Pair this recipe with crackers or toast, serve it over lettuce, or simply enjoy it by itself.


Serves 8

  • 4 cups cooked and chopped rotisserie chicken, skin and bones removed
  • 2 avocados, pitted, peeled and mashed
  • 4 scallions, green and white parts, thinly sliced
  • 2 stalks celery, diced
  • 3 tablespoons lime juice
  • 1/4 cup chopped cilantro
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste


  1. Mix all ingredients in a large bowl.
  2. Pair with whole-grain crackers or bread, serve over lettuce, or simply enjoy it by itself!
